About Unconsumed Collective

The Founder

Maddie Gallagher, MPH Certified Intuitive Eating Counselor & Health Coach

Hi, and thanks for being here!

I’m Maddie, Founder of Unconsumed Collective — A space rooted in shifting the narrative around health, worthiness, and what it means to truly care for ourselves.

At eleven years old, in the pursuit of acceptance, I developed an eating disorder — A struggle that would quietly shape the next decade of my life. What began as an innocent attempt to achieve a “healthy” and “ideal” body quickly evolved into something far more consuming - Gradually taking hold of how I lived and saw myself.

Yet outwardly, I appeared driven, successful, and “healthy.” Without fitting the stereotypical image of an eating disorder — and within a culture so deeply steeped in diet culture — my experience went largely unseen.

And so, the struggle continued.

It wasn’t until my mid-twenties that I found my way to treatment. Looking back, I’ve come to understand that my experience was not unique.

The Work

This experience of delayed recognition and missed opportunities for care is all too common - And is precisely why Unconsumed Collective exists!

My work spans both prevention and recovery — Offering 1:1 coaching for individuals alongside consulting and trainings designed to support broader, advocacy-driven change.

Across both individual and community spaces, my approach is collaborative, non-judgmental, and grounded in trust. Here, we focus on rebuilding a more steady, autonomous relationship with food, body, and our understanding of health.

Fueled by curiosity and compassion, this work is rooted in unlearning, reconnection, and the belief that a life free from food and body noise is not only possible — but deserved.

A life Unconsumed.
